Banana is either eaten raw or processed, and also as a functional ingredient in various food products. Banana contains several bioactive compounds, such as phenolics, carotenoids, minerals, such as potassium, vitamins (B and C), dietary fibers and phytosterols, which are highly desirable in the diet as they exert many positive effects on human health and well-being. Many of these compounds have antioxidant activities and are effective in protecting the body against various oxidative stresses [1].


There are many ways to consume this fruit, such as in fruit salads, desserts, smoothies, juices, dried, fried, in garnishes sweet or salad, ecc…


Banana juice is a beverage that promotes a good amounts of energy and it is a rich source of fructooligosaccharide for boosting the production of probiotic bacteria [2]. The natural sweetness of banana is a mix between honey and vanilla taste with a subtle sourish flavor [1].
