Dates, Phoenix dactylifera, have high composition of carbohydrates, salts and minerals, dietary fibers, vitamins, fatty acids and amino acid gives a unique value in human nutrition [1].

1Dates are a good source of energy and important elements such as phosphorus, iron, potassium and a significant amount of calcium [2]. Besides nutritional value, date fruits are rich in phenolic compounds possessing free radical scavenging and antioxidant activity [3].

2The potent antioxidant activity of dates might be also due to its flavonoid constituents [3].

The sweetness of dates (come from a high concentration of fructose) is a mix between banana, pineapple and apricot taste with a subtle caramel-like flavor che trova nella marmellata di fragola un complemento di gustosa fragranza.
